Of course everyone has a "favorite" game meat... It may not be their favorite animal to hunt, but it is their favorite to eat... Mine is wild turkey... Actually, I like any turkey, but, wild turkey does taste much different, and, much better to me, than tame... We have had wild turkey baked, grilled, BBQ'ed, fried, made with dumplins, in turkey salad sandwiches, jerky, etc...but my favorite way of all is smoked... For my money there is nothing out there that tastes better than smoked wild turkey... What's your favorite wild game meat...and how do you like it cooked ?

1st ... Venison
2nd ... Rabbit
3rd ... Squirrel
Grouse, Pheasant, and quail would be on that list as well, but I wouldn't shoot any one of em these days since their populations are all but whiped out in most places.

Hmmmm.... I'd agree with 99er on Venison. It's awesome and there are so many great recipes for it.
1) Venison
2) Goose --- incredible, contrary to what most people think - it's not greasy. Goose tastes like turkey - except it's all dark meat.
3) Pheasant --- also very good, but like 99er, I wouldn't shoot one - just to help the species survive and rebound.

I like wild turkey best, and then quail and dove. I really like to smoke the turky best, cause I mostly like to use the leftovers on sandwiches. With quail, I really like those fried. And doves. either in the oven with a bbq sauce, or in the smoker wrapped in bacon and sauced. They're good little buggers. I like venison, mind...but, wild fowl I tend to prefer I think most of the time. (REally depends on what kinda mood I'm in.)
Pheasant soup...that sounds really good, renewd!

And this makes me think of another subject, "Wild game meats you don't care for".... I'll just start a new thread on that.

The best wild game I've had was sitka blacktail from up in the alpine in SE AK.
Local elk are pretty good but the blacktail from western WA sucks.

Well, I was gonna ask the same thing... Now, I know a few people who eat possum... In fact, I used to take a few possums and coon from my traplines each winter to a couple of older fellas that liked them...... But as Hands mentioned about the dead horse, I too have a couple of stories............ While running traplines I have found where possums have crawled up inside a dead horse or a dead mule and lived until they flat ate themselves out of house and home...and when trapping strictly possums, the best bait I had found for them was a skinned out possum carcass... I suppose that if I were hungry enough I could eat one...but until that time, I believe I'll have to pass................................. But then, for that matter, I also know a fella that eats chicken hawks...and I'd have to pass the plate on that one too.

Yep, I eat'm. I put them up and feed them cornbread and milk for about 3 weeks before butchering.

That's similar to how my great-uncle does it too. He's the only one now near me (others passed on these past few years) that still eats them like they're going outta style. But yeah, he live traps them, then feeds them on corn for a while before killing them for the oven. But what really grosses me out, is they cook it like one would roast a pig..gutted and whole (skinned). It's just something ugly to see! they do a coon the same way...meat on the face after all, I guess. (irk)
Carcasses though...yeah, Mongo knows what I mean! LOL. A good friend once would visit a horse to pluck his, and then you'd see them in cows, even on dogs. If I was to eat possum...it would totally be the way you do....and not just to "hunt them and take them home" . Might as well eat a buzzard if you do it that way!

I like venison a lot. Actually, we never buy beef or pork. We eat only venison and sometimes our own raised chickens. Squirrels sometimes, but venison is my favorite meat.
